Crock Pot Orange Chicken

Baseball has started for my boys so I have been doing a lot of dinners in the crock pot. I have been getting some great recipes from link parties and one of my favorite sites, Deals to Meals and tons of other blogs out there you can find at the end of some of my post or the new link up page tab.

There are plenty of great recipes on the Internet and that is one thing I love about the Internet. It is one huge recipe party. Well I pulled this out of know where the other day and decided to share. It turned out really well and my family loved it. You can always add what you want and mix it up.


The other night is baseball night and earlier that day I think to myself, I should get dinner started for tonight.  I saw another mother that day and we verified the field and time. The day went on and as I was starting the rice. My good friend who I saw earlier, sent me a text at 5:03pm and asked me if we were going to make it to the game. What? I thought it was at 6:45pm, Oh no we are late. I turned off the stove and the crock pot. My son went and got dressed, I got the other two kids ready and we made it to the field by 5:20pm. Not bad. I need all the help I can get with my three beautiful children, husband, my mother and work. I love my life, but some days I get mixed up. It happens.

I get to make mistakes too, I do my best to be perfect but it does not always work out that way. When we got to the baseball field, my son ran up and it was his turn bat, talk about timing. He hit the ball and made it to first base. Even though we were late, he got there in time to bat, got on base and ended up scoring for the team. It was a fun game and it didn't matter that I screwed up and we were late. They won 9-6 and we all had a great time. Then it was time to go home to dinner. Finally

The Recipe

Now remember the ingredients are optional and I really have no idea how much of what I put in but I have a pretty good guess. Here is what you need to get started.


What you Need!

4-5 Chicken Breast
1/2 - 1 Cup of Orange Juice
A splash of Apple Cider Vinegar 
1/2 - 1 Cup Peach Marmalade
2-3 Handfuls of Frozen or Fresh Veggies. If using fresh vegetable add when half way done.
A couple of scrapes of lemon and orange peels or
3-5 drops each Lemon and Wild Orange Essential Oils

Start with placing chicken in the Crock pot and adding, orange juice, apple cider vinegar and Peach Marmalade and Essential Oils or fruit peel.



Then add the frozen or fresh veggies and anything else you'd like. 


Cook 1/2 or all day depending on Frozen or thawed chicken. 

A 1/2 hour before serving dinner, start the rice. You can use any rice that you would like.
We used Organic Wild Rice .

And here is the final dish. It is full of flavor, it is quick, the kids loved it and so did my husband and mother. I want to thank my good friend Michelle for making me some of her homemade Peach Marmalade. 

I mixed my plate all together. It was wonderful without the mess of the Original Orange Chicken. We also had Spinach salad which didn't make it on the plate yet when I took the picture. 


Additional Quick Crock Pot Options

Oriental Pineapple Chicken
You can use a can (or 1 cup fresh) pineapple include the juice, with brown sugar and soy sauce, ginger or a drop or two of Ginger Essential Oil. Stir Fry the Veggies or throw them in the Crock Pot. Serve with Rice or noodles and salad.

BBQ Chicken
Add Chicken, Garlic Salt and Onions with 1/4 cup of water. Half way through cooking add BBQ Sauce, green and red peppers. When done shred chicken and add to French rolls for pulled BBQ Chicken Sandwiches or serve over rice or coleslaw.

Honey Chicken
Chicken, Honey 1/2 -1 cup, Lemon Juice/peel or 5-10 drops of Lemon Essential Oil
