Dairy Free Homemade Potato Soup (Bacon Optional
What You need
6-8 medium potatoes of choice
1 tablespoon coconut oil
1-2 onions
2 cloves garlic
3 stalks celery
3 carrots
4 cups organic chicken or vegetable broth
1 can coconut milk
1 tablespoon thyme
1-2 drops Basil or 1 teaspoon dried basil (we used essential oil and it was amazing and full of flavor)
1/2 teaspoon cyann pepper
8 pieces bacon cooked
Handful of scallions
Salt and pepper to taste
What to do...
1. Add Diced onions, garlic, chop celery and carrots to a tablespoon of coconut oil. Sauté until onions are translucent
2. Peel and chop potatos and add to onion mix
3. Add thyme, basil, cyann pepper and stir
4. Add broth and coconut milk
5. Bring to a boil for then simmer for 20 minutes
Turn off and let cool a bit.
Then remove 3 cups and put in blender, blend and place back in soup. Stir, then Serve in bowl and top with bacon and chives. Enjoy
Other options
Sever with green salad, bread of choice, add cheese to the top or make a cashew lemon sour cream to top with, add broccoli or red peppers. So many options...Be creative and enjoy.

My kids loved this recipe, thought it was sweet but spicy and ate it. Definitely going to try red peppers next time. My family loves them. May add to soup or serve on the side or dice and at as a topping.
