Lemon or Lime Bars

Lemon or Lime Bars - I have made the Lemon Bars and just about ate half the pan myself. If you need a dessert for everyone, you won't go wrong with this recipe.



What You Need

CRUST
1 cup butter, softened (not melted)
2 cups flour (you can use coconut or almond flour)
1/2 cup powdered sugar
1/4 teaspoon sea salt

FILLING
4 eggs (can use ground flax seed or other egg substitute of choice)
2 cups of sugar (may substitute with 1 cup of honey or equal amount of sugar substitute) I am not a fan of sugar and have been learning how to bake and cook without it. 
3 tablespoons lemon or lime juice
1 tablespoon water
1/4 cup cornstarch
6 drops lemon or lime essential oil (or more to taste)

TOPPING
1/2 cup powdered sugar
1 drop of Lemon or Lime essential oil

DIRECTIONS
Mix butter, flour, 1/2 cup powdered sugar, and salt with fastry bender. Press into the ottom of 9x13" pan. Tip - for nicer presentation, line pan with parchment paper so you can lift bars out of pan. 

Bake at 350 degrees for 15 minutes.

While baking, next you are going to mix eggs and sugar till light and fluffy. Then add the Lemon or Lime juice, essential oil, water and cornstarch. Pour mixture over semi-cooked crust and bake at 350 degrees for 25-30 more minutes. 

Next mix powdered sugar and citrus oil in a baggie and shake it up. When bars are done, sprinkle with citrus infused powdered sugar on top y putting into metal strainer and shaking onto warm bars (Let them cool and bit but not completely and serve.)
